Oil-Free, Sugar-Free Tsoureki (Greek Easter Sweet Bread)

Ingredients:
yeast
stevia
mastic powder
mahlab
vanilla powder
oranges
tahini
all-purpose flour
carob syrup
sesame seeds
chocolate chips
In a small bowl, add 1 cup of lukewarm water, 14 g dry yeast (2 sachets) and 1 tbsp carob syrup, stir well and let the mixture rest for about 10 minutes (until the yeast activates). In a large bowl, add 500 ml fresh orange juice, 250 g stevia, ½ cup tahini, 2 sachets of mahlab (16 g), 2 capsules
(0.3 g each) of vanilla powder, ½ tsp mastic powder and the zest of 2 oranges. Stir until smooth and add 1200 g all-purpose flour. At this stage, add the yeast mixture and mix well until a dough forms (you can also use a mixer if you have one). Add chocolate chips (optional) and leave the dough in the fridge overnight. The next day, take the dough out, cut it into pieces and roll them into thin strips, then braid them in pairs into tsoureki. Finally, brush them with diluted carob syrup and sprinkle with sesame seeds (optional). Bake at 150°C for 25-30 minutes. Good luck!
