šŸ« Chickpea Kariokes

Ingredients for the base

  • 3 cups boiled chickpeas, well drained

  • 6 eggs

  • 130 g olive oil

  • 1½ cups unsweetened cocoa

For the mixture

  • Up to 1 cup honey, depending on the sweetness and texture you want

  • Cinnamon

  • Cloves

  • Walnuts, coarsely chopped

  • Raisins

  • 50 g melted dark chocolate couverture

For the coating

  • Extra couverture, melted

Optional

  • Scoops of protein powder (as many as you like; if the mixture gets too stiff, add a little extra milk)

  • A little brandy or rum (it goes very well)

Method

  1. Blend the chickpeas, eggs and olive oil until you get a smooth mixture.

  2. Add the cocoa and keep blending. If the blender struggles, transfer the mixture to a bowl and mix with a whisk.

  3. Pour into a baking tin or pan lined with parchment paper and bake in a preheated oven at 175°C for about 25–35 minutes, until the base is baked.

  4. Let it cool completely and crumble it into a large bowl.

  5. Gradually add the honey, cinnamon, cloves, walnuts, raisins and the 50 g of melted couverture. Optionally, add the protein powder and a little brandy or rum.

  6. Mix and knead until you get a firm mixture that can be shaped.

  7. Shape the mixture into a log, wrap it tightly in parchment paper and refrigerate until it sets well.

  8. Cut into slices and dip each karioka in the melted couverture so it is coated on all sides.

  9. Place the kariokes on parchment paper and refrigerate until the chocolate sets. Keep them in the fridge.
